Ingredients:
- 2 cups flattened rice (poha)
- 1 large onion, finely chopped
- 1 green chili, finely chopped
- 1/2 cup green peas
- 1/4 cup roasted peanuts
- 2 tablespoons vegetable oil
- 1 teaspoon mustard seeds
- 1 teaspoon cumin seeds
- 1/2 teaspoon turmeric powder
- Salt to taste
- Fresh coriander leaves for garnish
- Lemon wedges for serving
Directions:
- Rinse the flattened rice (poha) under cold water until it becomes soft. Drain excess water and set aside.
- Heat oil in a pan, add mustard seeds, and let them splutter. Add cumin seeds and sauté until they release a nice aroma.
- Add chopped onions and green chilies. Sauté until the onions turn golden brown.
- Mix in turmeric powder, green peas, and roasted peanuts. Cook for 2-3 minutes until the peas are tender.
- Add the rinsed flattened rice to the pan. Mix gently to combine all the ingredients. Cook for an additional 3-4 minutes.
- Season with salt and garnish with fresh coriander leaves.
- Serve hot with lemon wedges on the side.
