Ingredients:

  • 2 cups flattened rice (poha)
  • 1 large onion, finely chopped
  • 1 green chili, finely chopped
  • 1/2 cup green peas
  • 1/4 cup roasted peanuts
  • 2 tablespoons vegetable oil
  • 1 teaspoon mustard seeds
  • 1 teaspoon cumin seeds
  • 1/2 teaspoon turmeric powder
  • Salt to taste
  • Fresh coriander leaves for garnish
  • Lemon wedges for serving

Directions:

  1. Rinse the flattened rice (poha) under cold water until it becomes soft. Drain excess water and set aside.
  2. Heat oil in a pan, add mustard seeds, and let them splutter. Add cumin seeds and sauté until they release a nice aroma.
  3. Add chopped onions and green chilies. Sauté until the onions turn golden brown.
  4. Mix in turmeric powder, green peas, and roasted peanuts. Cook for 2-3 minutes until the peas are tender.
  5. Add the rinsed flattened rice to the pan. Mix gently to combine all the ingredients. Cook for an additional 3-4 minutes.
  6. Season with salt and garnish with fresh coriander leaves.
  7. Serve hot with lemon wedges on the side.
